Last year, we shared an Irish Kitchen Prayer
This year, we wanted to share an Irish Blessing and, again, our family Irish soda bread recipe. We just made a batch last night!
May God Grant You Always
A Sunbeam To Warm You
A Moonbeam To Charm You
A Sheltering Angel So Nothing Can Harm You
Laughter to Cheer You
Faithful Family And Friends Near You
And Whenever You Pray, Heaven To Hear You
Brophy-Hilton’s Famous Irish Soda Bread
3 ½ cups flour
2/3 cup sugar
1 teas. salt
1 tablespoon baking powder
1 teas. baking soda
2 cups raisins
2 tablespoons caraway seeds
2 eggs lightly beaten
1 ½ cups buttermilk
1 tablespoon melted butter
Preheat oven to 375 degrees
Grease one loaf pan
Put all dry ingredients into a bowl
Toss and coat raisins with the dry mixture
Form mixture into mound-type shape and make a well in the center
Add remaining ingredients to the well and mix lightly
Do not over mix
Pour into pan and bake for one hour.
It is best to let the bread cool before slicing.
Some bakers believe that their day-old bread is tastier than right from the oven, especially toasted and buttered.
We hope your family is staying healthy and happy during this trying time.
