Irish Kitchen Prayer

     Bless us with good food

     the gift of gab

     and hearty laughter

     May the love and joy

     we share

     be with us ever after.

    

Brophy-Hilton’s Famous Irish Soda Bread

IRISH SODA BREAD

3 ½ cups flour

2/3 cup sugar

1 teas. salt

1 tablespoon baking powder

1 teas. baking soda

2 cups raisins

2 tablespoons caraway seeds

2 eggs lightly beaten

1 ½ cups buttermilk

1 tablespoon melted butter

Preheat oven to 375 degrees

Grease one loaf pan

Put all dry ingredients into a bowl

Toss and coat raisins with the dry mixture

Form mixture into mound-type shape and make a well in the center

Add remaining ingredients to the well and mix lightly

Do not over mix

Pour into pan and bake for one hour.

It is best to let the bread cool before slicing.

Some bakers believe that their day-old bread is tastier than right from the oven, especially toasted and buttered.
